Miso Avocado Toast with Eggs and Greens

This Miso Avocado Toast with Eggs and Greens recipe puts a fresh spin on the classic avocado toast combo with delicious results. Featuring local and seasonal ingredients, this is one of my all-time favourite quick breakfast recipes!

This toast recipe is so addictive that for the longest time it was the first thing I’d make whenever I returned home from travelling.

What is miso?

Miso is a fermented soybean paste. It has a salty, umami flavour profile and is most often found in Japanese dishes. A few years ago, I started experimenting using miso for things other than ramen and Asian-inspired recipes because of its digestive health benefits. Here I’ve combined it with hummus for the base and the result is beyond delicious!

If you need more convincing, remember that avocados are not only a delicious source of heart healthy fats — they are nutritional powerhouses high in potassium, fibre and antioxidants that provide a range of health benefits. Combine both the above with lots of fresh lemon, farm fresh eggs, hummus, greens and your favourite toasted crusty bread and you get a flavourful, nutrient-rich and satisfying toast combo you’ll want to make again and again.

    Miso Avocado Toast with Eggs and Greens

    Makes 1-2 servings; prep time 20 minutes.

    Ingredients:

    1 avocado, peeled and mashed

    1 teaspoon freshly squeezed lemon juice

    2 7-minute soft boiled eggs

    2 slices multigrain sourdough

    Hummus, white miso paste, greens and/or herbs of your choice + freshly ground black pepper to taste

    Instructions:

    1. Prepare your avocado and mash together with lemon juice.

    2. Boil, poach, scramble or fry your eggs in a cast iron skillet with avocado oil. While the eggs are cooking, grill or toast your sourdough.

    3. Spread toasts with hummus and miso as desired and top with avocado mixture. Next add a layer of fresh greens.

    4. Once your eggs are cooked transfer them to your toasts and finish with fresh herbs and lots of pepper.
