- 1 avocado peeled and mashed
- 1 teaspoon freshly squeezed lemon juice
- 2 eggs cooked your way
- 2 slices thick artisan or sourdough bread
- Hummus, white (shiro) miso (about 1 tsp or 5 g), pea shoots and fresh dill or your herbs/greens of choice as desired
- Freshly ground black pepper to taste
Prevent your screen from going dark
Prepare your avocado and mash together with lemon juice.
Boil, poach, scramble or fry your eggs in a cast iron skillet with butter or oil. While the eggs are cooking, grill or toast the bread.
Spread toasts with hummus and miso as desired and top with avocado mixture.
Once your eggs are cooked, transfer them to your toasts and top with pea shoots, fresh dill and lots of pepper. EAT!
