Prepare your avocado and mash together with lemon juice.
Boil, poach, scramble or fry your eggs in a cast iron skillet with avocado oil. While the eggs are cooking, grill or toast your Everyday Artisan Bread.
Spread toasts with hummus and miso as desired and top with avocado mixture.
Once your eggs are cooked, transfer them to your toasts and top with pea shoots, fresh dill and lots of pepper. EAT!
