Featuring local and seasonal ingredients, this is one of my all-time favourite quick breakfast recipes. It’s so addictive that for the longest time, it was the first thing Iโd make whenever I returned home from travelling.
Here’s Everything You’ll Need to Make These Miso Avocado Toasts with Eggs & Greens
- 1 avocado
- Freshly squeezed lemon juice
- Two eggs cooked your way
- 2 slices Everyday Artisan Bread
- Hummus, white (shiro) miso, pea shoots and fresh dill or your herbs/greens of choice
- Freshly ground black pepper to taste
What is White (Shiro) Miso?
Miso is a fermented soybean paste. It has a salty, umami flavour profile and is most often found in Japanese dishes. A few years ago, I started experimenting using miso for things other than ramen and Asian-inspired recipes because of its digestive health benefits. Here, Iโve combined it with hummus for the base and the result is beyond delicious!
These herby miso avocado toasts with eggs & greens are made all the better with a squeeze of bright lemon, farm fresh eggs, high-protein hummus and my favourite toasted crusty bread. A flavourful, nutrient-rich and satisfying toast combo youโll want to make again and again!
Miso Avocado Toasts with Eggs & Greens
Equipment
Ingredients
- 1 avocado peeled and mashed
- 1 teaspoon freshly squeezed lemon juice
- 2 eggs cooked your way
- 2 slices Everyday Artisan Bread
- Hummus, white (shiro) miso (about 1 tsp or 5 g), pea shoots and fresh dill or your herbs/greens of choice
- Freshly ground black pepper to taste
Instructions
- Prepare your avocado and mash together with lemon juice.
- Boil, poach, scramble or fry your eggs in a cast iron skillet with avocado oil. While the eggs are cooking, grill or toast your Everyday Artisan Bread.
- Spread toasts with hummus and miso as desired and top with avocado mixture.
- Once your eggs are cooked, transfer them to your toasts and top with pea shoots, fresh dill and lots of pepper. EAT!
