When avocado toast came on the scene years ago, one of the first places I saw it on a menu was at Bridgehead Coffeehouse in Ottawa. I’m pretty sure they stopped serving it some time ago, but as someone who eats avocado toast for breakfast or lunch a couple of times a week, it’s been my basic recipe ever since.
Made with good bread and ripe avocados, even the simplest avocado toast is delicious. It’s super easy to make, it’s healthy and satisfying, and it’s a blank canvas for flavourful seasonal toppings. What’s not to love?
This version combines healthy fats with zesty fresh lemon, savoury plant-based protein and a pinch of salt all served up on my favourite food delivery vehicle—crunchy, thickly sliced whole grain toast.
Here’s everything you’ll need to make Bridgehead’s Avocado Toast (for 2 slices)
- 1 avocado
- 1 teaspoon fresh lemon juice
- 1 teaspoon nutritional yeast
- Chili flakes (optional)
- Flaky salt
- Two thick slices of your favourite whole grain, well-toasted bread
What is nutritional yeast?
Nutritional yeast is a deactivated yeast known for its cheesy, nutty umami flavour and is often used as a vegan substitute for cheese. It’s a great source of plant-based protein, B vitamins and antioxidants and a versatile ingredient used in cooking or as a seasoning. Try shaking it over popcorn!

How to make the best avocado toast
- Use ripe but not over-ripe avocados. Look for ones that yield slightly when squeezed but that aren’t mushy or discoloured once opened.
- Bake or buy good bread and toast it well. I think thickly sliced, whole grain bread makes the best avocado toast. I love the contrast between the crispy crust and the creamy avocado!
- Mash your avocado separately. Use a bowl, rather than mashing it onto your toast. Think of it like chips and guacamole—you want the toast to retain its shape and texture for best results.
- Don’t forget the lemon juice and salt. Aside from adding delicious flavour notes, they work together! The salt balances out the richness of the avocado and brings out its natural sweetness and nuttiness. It also works with the lemon juice, which provides a citrusy flavour boost (and vitamin C!) to make the avocado creamier when it draws out moisture. Bonus? Both the salt and lemon juice help to inhibit the browning caused by oxidization.

Bridgehead’s Avocado Toast
Ingredients
- 1 avocado pit and peel removed
- 1 teaspoon fresh lemon juice
- 1 teaspoon nutritional yeast
- Chili flakes optional
- Flaky salt
- Two slices of your favourite whole grain bread, well-toasted
Instructions
- In a small mixing bowl, mash together avocado and lemon juice. Spread mashed avocado onto toast and sprinkle nutritional yeast and chili flakes across the tops. Finish with flaky salt.
